Easy Avocado Tomato Onion Salad

  • 2 tablespoons extra virgin olive oil
  • ¼ cup minced cilantro or parsley
  • ¼ small red onion, thinly sliced
  • 2 ripe avocados, diced
  • 1–2 medium tomatoes, diced (or 1 cup cherry tomatoes, halved)
  • 1 tablespoon fresh lime or lemon juice
  • Salt & black pepper, to taste
  • Optional additions:
    • 1 small garlic clove, minced
    • ½ jalapeño, finely chopped
    • ½ teaspoon cumin
    • Crumbled feta cheese

1. Prepare the veggies

  • Dice the avocados.
  • Dice the tomatoes (or halve cherry tomatoes).
  • Thinly slice the red onion.
  • Mince cilantro or parsley.

2. Make the dressing

In a small bowl, whisk together:

  • olive oil
  • lime or lemon juice
  • salt & pepper
  • (Optional) garlic or cumin

3. Combine the salad

  1. In a medium bowl, add:
    • diced avocados
    • tomatoes
    • red onion
    • cilantro/parsley
  2. Pour the dressing over the top.
  3. Gently toss to combine so the avocados don’t mash.

4. Serve

Serve immediately or chill for 10 minutes.

  • grilled chicken or fish
  • tacos
  • rice bowls
  • summer BBQs

 Tips

  • Add lime juice right away to prevent avocado browning.
  • Use cherry tomatoes for less juiciness.
  • For extra flavor, drizzle a bit of balsamic or chili oil.
