🥕 Creamy Carrot Milk Soup Recipe
Ingredients:
4–5 medium carrots
2 cups milk
1 cup water (or vegetable stock)
1 tbsp butter
Salt, to taste
Optional: pinch of sugar, black pepper, nutmeg
Instructions:
- Prep carrots: Peel and slice the carrots into thin rounds.
- Cook: In a pot, add water (or stock) and carrots. Bring to a boil and cook until carrots are very soft (10–15 minutes).
- Add milk: Pour in the milk and simmer gently for 5 minutes (do not boil hard).
- Butter & season: Add butter, salt, and optional spices.
- Blend (optional): For a creamy texture, blend until smooth.
- Serve: Hot, with bread or croutons.
Tips:
For extra richness, replace part of the milk with cream.
Add a little grated ginger or garlic for a savory twist.
Perfect as a light starter or comforting dinner soup.
