- 1/2 cup sour cream (optional)
- Additional Oreos for topping (optional)
- Chocolate syrup (optional)
Instructions:
- Prepare the Crust:
- Preheat your oven to 325°F (163°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, combine the crushed Oreos and melted butter. Mix until the crumbs are evenly coated.

- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and sour cream (if using) until fully combined.
- Assemble the Bars:
- Pour the cheesecake batter over the cooled Oreo crust in the baking pan.
- Use a spatula to smooth the top, then crush additional Oreos and sprinkle them evenly over the top for extra flavor and texture.
- Bake:
- Bake the cheesecake bars for 40-45 minutes, or until the center is set and a slight jiggle remains when shaken. The edges should be lightly golden.
- Remove from the oven and let it cool completely in the pan.
- Chill and Serve:
- After cooling, place the cheesecake bars in the refrigerator for at least 2 hours to fully set.
- Once chilled, cut into squares, drizzle with chocolate syrup if desired, and enjoy!
