- 2 tablespoons extra virgin olive oil
- ¼ cup minced cilantro or parsley
- ¼ small red onion, thinly sliced
- 2 ripe avocados, diced
- 1–2 medium tomatoes, diced (or 1 cup cherry tomatoes, halved)
- 1 tablespoon fresh lime or lemon juice
- Salt & black pepper, to taste
- Optional additions:
- 1 small garlic clove, minced
- ½ jalapeño, finely chopped
- ½ teaspoon cumin
- Crumbled feta cheese
1. Prepare the veggies
- Dice the avocados.
- Dice the tomatoes (or halve cherry tomatoes).
- Thinly slice the red onion.
- Mince cilantro or parsley.
2. Make the dressing
In a small bowl, whisk together:
- olive oil
- lime or lemon juice
- salt & pepper
- (Optional) garlic or cumin
3. Combine the salad
- In a medium bowl, add:
- diced avocados
- tomatoes
- red onion
- cilantro/parsley
- Pour the dressing over the top.
- Gently toss to combine so the avocados don’t mash.
4. Serve
Serve immediately or chill for 10 minutes.

Tips
- Add lime juice right away to prevent avocado browning.
