Ingredients
Cake
1½ cups (190 g) all-purpose flour
1 tsp baking powder
½ tsp salt
¾ cup (150 g) sugar
½ cup (120 ml) vegetable oil or melted butter
2 large eggs
½ cup (120 ml) milk or yogurt
Zest of 2 lemons
¼ cup (60 ml) fresh lemon juice
1 tsp vanilla extract
Lemon Glaze
1 cup (120 g) powdered sugar
2–3 tbsp fresh lemon juice
👩🍳 Instructions
Preheat oven to 170–175°C (340–350°F).
Grease and line a loaf pan.
Mix dry ingredients
In a bowl, whisk flour, baking powder, and salt.
Mix wet ingredients
In another bowl, beat sugar and eggs until pale.
Add oil (or butter), milk/yogurt, lemon zest, lemon juice, and vanilla.
Combine
Add dry ingredients to wet and mix just until smooth (don’t overmix).
Bake
Pour into the pan and bake 45–55 minutes, until a toothpick comes out clean.
Prepare glaze
Mix powdered sugar with lemon juice until thick but pourable.
Glaze the cake
While cake is warm, poke small holes on top and drizzle glaze generously.
