Spinach & Cheese Puff Pastry Pockets

Ingredients

For the filling

  • 300 g fresh spinach (or 200 g frozen, thawed & drained)
  • 200 g ricotta cheese
  • 150 g mozzarella (shredded)
  • 50 g feta cheese (optional but delicious!)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Pinch of nutmeg (optional)

For the pastry

  • 1 package puff pastry (2 sheets)
  • 1 egg (for brushing)

Instructions

1. Prepare the spinach

  • Heat olive oil in a pan.
  • Add garlic, sauté 30 seconds.
  • Add chopped spinach and cook until wilted (or just heat if using frozen).
  • Let cool slightly.

2. Make the filling

Mix in a bowl:

  • cooked spinach
  • ricotta
  • mozzarella
  • feta
  • salt, pepper, nutmeg

Stir until creamy and well combined.

3. Shape the pockets

  • Roll out your puff pastry.
  • Cut into squares (10×10 cm).
  • Place a spoonful of filling in the center.
  • Fold diagonally into triangles.
  • Seal the edges with a fork (like in the photo).

4. Brush & bake

  • Place on a baking tray lined with parchment.
  • Brush with beaten egg.
  • Bake at 200°C (400°F) for 18–22 minutes until golden and puffed.
