Tasty Zucchini Burgers: A Light Option

Zucchini burgers are a light, vegetarian alternative to traditional meat burgers. This dish combines flavor and simplicity, making it ideal for a light yet tasty option during summer meals. They are also an excellent choice for filling a sandwich for a picnic or for taking to work.

Ingredients

  • 400 g zucchini
  • 120 g stale bread
  • 50 g grated cheese
  • 1 clove of garlic
  • ½ glass of milk
  • Breadcrumbs, as needed
  • Salt, to taste
  • Olive oil, as needed

Preparation

  1. Start by thoroughly washing the zucchini and trimming off the ends.
  2. Cut them into small cubes and cook them in a non-stick pan with extra-virgin olive oil and a whole clove of garlic.
  3. Add a pinch of salt and let them cook over low heat for about 10 minutes, stirring occasionally with a wooden spoon.
  4. While the zucchini cool, soak the stale bread in the milk.
  5. Squeeze out the excess milk from the bread and add it to the zucchini in a bowl.
  6. Add the grated cheese and mix well.
  7. Shape the mixture into patties using a burger mold or a glass.
  8. Coat the patties in breadcrumbs and cook them over medium heat in a lightly oiled pan.
  9. Halfway through cooking, turn the patties so they cook evenly on both sides.
