Ingredients
- 400 g zucchini
- 120 g stale bread
- 50 g grated cheese
- 1 clove of garlic
- ½ glass of milk
- Breadcrumbs, as needed
- Salt, to taste
- Olive oil, as needed
Preparation
- Start by thoroughly washing the zucchini and trimming off the ends.
- Cut them into small cubes and cook them in a non-stick pan with extra-virgin olive oil and a whole clove of garlic.
- Add a pinch of salt and let them cook over low heat for about 10 minutes, stirring occasionally with a wooden spoon.
- While the zucchini cool, soak the stale bread in the milk.
- Squeeze out the excess milk from the bread and add it to the zucchini in a bowl.
- Add the grated cheese and mix well.
- Shape the mixture into patties using a burger mold or a glass.
- Coat the patties in breadcrumbs and cook them over medium heat in a lightly oiled pan.
- Halfway through cooking, turn the patties so they cook evenly on both sides.
